(Angelo Paratico) The persimmon, Diospyros kaki, which in Greek means “food of the gods”, is a fruit belonging to the Ebenaceae family and is also called Japanese persimmon. The most common variety of persimmon in Italy is the “Loto di Romagna”. Although it can cost up to €1.50 per piece at the greengrocer’s, it is often left to rot on the trees. There is a rumour that it causes weight gain, and even if it does contain a certain amount of sugar, it has many beneficial properties. A persimmon weighs about 230 grams and contains approximately 65 kcal per 100 grams.

Ripe persimmons are very easy to ripen. Simply place them in a box or on cardboard with apples in between, in a warm, dry, and, if possible, dark place. As apples ripen, they release acetylene and ethylene, two gases that increase the sugar content of persimmons, making them sweeter.

Persimmons are a rich source of vitamin A, vitamin C, and minerals. They contain a lot of good sugar and tannins, are energy-boosting, restorative for the nervous system and liver, and antibacterial in cases of gastroenteritis. Their high vitamin C content helps combat colds and winter flu syndromes. Persimmons are also rich in carotenoids such as beta-carotene and cryptoxanthin.

Persimmons are beneficial for beauty, thanks to their antioxidant properties that slow skin ageing. Furthermore, their pulp, when applied to the face and left for 10–15 minutes, is excellent for achieving soft and smooth skin. Persimmons also have antioxidant effects, boosting the immune system and regulating processes related to vision. Persimmon pulp contains substances such as tannins, which are effective in fighting free radicals, and is rich in minerals such as potassium and calcium, which are valuable allies against intestinal inflammation and asthenia caused by poor liver function.

Persimmons are also an excellent source of potassium. They are very beneficial for the nervous system and for those suffering from liver problems. Recommended for constipation, they have laxative and diuretic properties.
